Delicious recipes for baked chicken with potatoes and carrots

Baked chicken with potatoes and carrots

Ingredients

  • 1 chicken (1300 grams)
  • 2 potatoes (60 g)
  • 1 lemon (20 g)
  • 1 onion (30 g)
  • 4 carrots (100 g)
  • ½ cup white wine (100 ml)
  • 1 bay leaf, salt and olive oil to taste

Preparation

  • Wash, peel and cut carrots.
  • Cut the onions.
  • Put onions and carrots in an ovenproof dish.
  • The cleaned chicken meat should be seasoned and placed on top of the vegetables.
  • Squeeze the lemon juice over the chicken.
  • Add the bay leaf, olive oil and white wine.
  • Bake this dish for one hour in an oven preheated to 175 ºC.
  • Turn it every half hour. Take the dish out of the oven when the chicken is golden brown.
  • Fry the potatoes and serve them with the chicken.
Carrots

Baked chicken with potatoes and onions

Ingredients

  • 1 onion (30 g)
  • 2 carrots (30 g)
  • ½ red pepper (15 g)
  • 2 medium potatoes (60 g)
  • ½ green pepper (15 g)
  • 1 cup chicken broth (200 ml)
  • 2 chicken thighs (150 g)
  • 1 small cup of white wine (150 ml)

Preparation

  • Put the chicken in an ovenproof dish and season with thyme.
  • Cut onions, peppers, carrots and potatoes.
  • Add the vegetables with a little salt and olive oil to taste. Bake the dish  in the oven for an hour.
  • Half a cup of broth is poured over every 20 minutes. After cooking for 40 minutes, add the cup of white wine.
  • Just before it is finished, put the oven on the grill to brown the skin.

Chicken thighs with baked potatoes, leeks and carrots

Ingredients

  • 2 potatoes (60 g)
  • 1 leek (30 g)
  • 1 pinch of salt
  • Pepper to taste
  • Water (as needed)
  • 1 tbsp thyme
  • 2 carrots (30 g)
  • Vegetable oil to taste
  • 4 chicken thighs (500 g)

Preparation

  • Preheat the oven to 200ºC
  • Cut potatoes, leeks and carrots into small pieces.
  • Put the vegetables in an ovenproof dish and sprinkle with a little salt and thyme and add a cup of water.
  • Cover and cook for 20 minutes.
  • Add the chicken thighs, seasoned with black pepper and another cup of water. Bake for another 25 minutes.
  • Just before the chicken is done, put the oven on grill function to brown the chicken skin.
Chicken

Baked chicken with potatoes, mushrooms and peppers

Ingredients

  • 1 pinch of salt
  • 3 cloves garlic
  • 4 potatoes (100 g)
  • 2 onions (70 g)
  • Chicken (1.8 kg)
  • 1 red pepper (30 g)
  • 4 carrots (100 g)
  • 5 mushrooms (50 g)
  • ½ cup water (00 ml)
  • Extra virgin olive oil
  • The juice of 1 lemon (50 ml)
  • 1 tbsp oregano (10 g)
  • 1 tbsp thyme (10 g)
  • ½ cup white wine (100 ml)

Preparation

  • Mix parsley, thyme and oregano with chopped garlic, lemon juice and olive oil.
  • Remove the skin from the chicken and rub it in with the salt and herb mixture.
  • Wash and peel potatoes. Cut them into small cubes.
  • Wash, peel and cut carrots.
  • Divide the onions into four.
  • Place all the ingredients in an ovenproof dish together with mushrooms, peppers, a pinch of salt, oil, half a cup of wine and half a cup of water.
  • Bake in a preheated oven at 175ºC for one hour.
  • Turn the ingredients every half hour. The chicken should be golden brown and the vegetables should have full flavor.

Serve your dishes with baked chicken along with a glass of fine red wine. It will taste amazing!
