Creamy broccoli soup with poached eggs
Ingredients (4 servings)
- Water
- Olive oil
- 1 leek
- 3 garlic cloves
- 1 cup blue cheese (135 g)
- 4 small carrots
- 1 large head with broccoli
- 2 medium onions
- 1 or 2 stalks of celery
- 1 cup condensed milk (200 ml)
- 4 poached eggs (1 per person)
- 1 strip of bacon (120 g)
Approach
- Peel and cut the onion into cubes. Set aside.
- Peel a squash, grate it and slice it thinly.
- Bring the water to a boil. Just before it boils, put in peeled garlic cloves and set the heat to medium.
- When the garlic gives off its distinctive aroma, add in the carrot and leek.
- Heat a frying pan on medium heat with a little olive oil.
- After 4-5 minutes, put the celery in the saucepan with water and let everything boil for approx. 15 minutes.
- Season to taste.
- Meanwhile, fry the onion in the frying pan.
- Cut the broccoli into small pieces and boil the pieces in water.
- Put in the water you cooked the broccoli in together with the other vegetables. In addition, it is now time to have condensed milk and blue cheese. Stir well and remove from the heat.
- Add the cooked broccoli to the mixture and mash with a hand mixer on low speed.
- Then, poach the eggs and set aside.
- Before serving, cut the bacon into small pieces and fry for a few minutes in the pan you used for onions. Add the bacon and poached egg and the dish is ready!
Vegan creamy broccoli soup
Ingredients (2 servings)
- A pinch of sea salt
- 1 large broccoli
- 2 large onions
- 1 medium potato
- 2 cups water (500 ml)
- 1 tbsp olive oil (15 ml)
- Optional: black pepper
Approach
- Cut the broccoli into suitable large pieces and cook them. When they are al dente , take them off the heat and set aside.
- Heat a saucepan with olive oil on low heat.
- Peel, wash and cut the potatoes into thin slices.
- Divide the onion into cubes.
- Put onions and potatoes in the saucepan. Stir constantly while frying.
- When the onion is golden, add the broccoli and season with salt and pepper.
- Put the water in the saucepan and make sure everything is covered.
- Cook for 20 minutes on medium heat.
- When done cooking, take the saucepan off the plate and keep everything in a bowl. Mash everything with a hand mixer, and make sure all lumps are gone.
- Serve with bread or a couple of spoons of grated tofu.
Creamy broccoli soup with almond milk
Ingredients (4 servings)
- Vegetable oil
- 1 clove garlic
- 3 stalks celery
- 1 large broccoli
- 2 tablespoons chopped onion (30 g)
- 1 cup almond milk (200 ml)
- Salt and pepper
Approach
- As in the recipe above, cut the broccoli into small pieces and cook them. When it is al dente , set it aside.
- Cut the leaves of the celery sticks and cook until they are almost soft
- Peel and cut the onion into cubes.
- Heat a saucepan over medium heat with a little vegetable oil.
- Put broccoli and celery in the blender together with the other ingredients and mix until the soup is lump-free.
- Put the mixture in the sauce saucepan and let it thicken until the consistency is creamy.
- Season to taste, take away from the plate, serve and enjoy!
