Yes, this recipe is exactly as it sounds. You may think it seems a little strange, but there are several variations of this wonderful and healthy dish. Today, however, we want to share the most classic way to prepare it.

Ingredients

  • 1 cauliflower
  • 1 cup milk (250 ml)
  • 2 cups parmesan cheese (300 g)
  • 3 tablespoons butter (60 g)
  • 1/2 cup wheat flour (75 g)
  • 1 tbsp salt (15 g)

Preparation

  1. First, wash the cauliflower well. To ensure that it is clean and that you have got rid of as much bacteria as possible, you should  place it in a bowl of water filled with a solution containing 50% water and 50% vinegar.
  2. Leave it in the water for 25 or 30 minutes. During that time, you can turn it over a bit to ensure that the mixture covers the whole cauliflower.
  3. When the cauliflower is clean, take it out of the water, dry it and set it aside.
  4. Then boil some water and add salt to taste.
  5. Add the cauliflower and  cook until soft. Let it cool for a few minutes before cutting it into smaller pieces and setting it aside.
  6. Now you make the white sauce. In a small saucepan, add milk, salt and flour. Stir continuously.
  7. Wait until the sauce thickens and add butter.
  8. When the sauce is thick enough,  stir a little more and then lower the heat gradually  until you finally turn it off completely. Remember that the sauce should never boil.
  9. Cover the bottom of a casserole dish with the sauce and start grating the cauliflower when it has cooled.
  10. Sprinkle the grated cauliflower evenly on top until everything is covered.
  11. Make several layers with the white sauce and cauliflower. Continue until the mold is full.
  12. Preheat the oven to 180ºC. Just before inserting the dish, sprinkle with parmesan cheese.
  13. Bake it for 25 to 30 minutes and enjoy the tasty result: gratinated cauliflower with white sauce.
